Spaghetti and meatballs

For dinner last night we made an Italian-style dish. We baked slices of eggplant with turkey meatballs and tomato sauce in the oven, then, right before it was done, we sprinkled it with grated Asiago cheese, and then served it over rice pasta. Fairly simple but tasty dinner. Alexander also liked it and ate a substantial amount. Of course, tomato sauce and the little prince Alexander is a combination that is guaranteed to result in a truly Royal mess! Hues of red and orange were everywhere! His hands and face were literally dripping with tomato sauce. I don’t know what we were thinking putting a white (yes, white) bib on him… it has survived many feedings, but that one meal has likely destroyed it for good. And perhaps I should not even tell you how tough it was to get baked tomato sauce out of the white surface of the tray on which Alexander was eating… I know Alexander isn’t even talking yet, but I am wondering how soon we can start training him to use silverware? Seriously though, I have to say that watching Sankin eat spaghetti, eggplant, and meatballs with tomato sauce was hugely entertaining, and we thoroughly enjoyed it.

Some time ago Lena wrote about Sankin’s love for tomatoes. Her observations remained true to this day: if there is a tomato in sight, Alexander would insist on getting it, and may even refuse to eat other things. The little prince is still a Pomodoro Boy. I am wondering whether last night’s dinner would have been less successful and not as much fun if the tomato sauce, which resulted in such a big mess, was not involved. Perhaps we should make more dishes like that, since Alexander, and all of us, liked it so much and had such a good time.
